Mustard and Spinach Saag

Ingredients:
Mustard 1½ lbs
Spinach 1 lb
Green Garlic 1 stem
Green Onion 1 stem
Salt 1½ teaspoon or to taste
Hot Peppers 5 to 10 or to taste
Water 2 Cups
Flour ¼ Cup
Butter 2 tablespoons

Remove the leaves from mustard stems. Peel mustard stems to remove outer skin. Wash Mustard leaves, Mustard stems, Spinach and chop them. Put all greens in pot to cook for about 20 to 30 minutes on medium heat. Remove the water that separated from greens during cooking. Add salt, pepper and cook for another 15 minutes.

Then add ¼ cup flour and use blender to grind the cooked Saag in fine paste. Use a frying pan to heat some cooking oil or butter. When oil is hot add some chopped green garlic and onion, cook it until light brown. Then add this butter green garlic and onion to cooked Saag, mix it. Add some fine chopped Cilantro (Coriander) and serve hot with pita bread or Nan (Indian flat bread cooked in oven).
